Drying Characteristics, Kinetic Modeling, Energy and Exergy Analyses of Water Yam (Dioscorea alata) in a Hot Air Dryer

In this study, drying characteristics, kinetic modelling, energy and exergy analyses of a convective hot air dryer are presented for water yam. The experiments were carried out at temperature levels 50, 60, 70°C slice thicknesses 3, 6, 9 mm. effects variables on the rate (DR), moisture diffusivity (Deff), activation (Ea), utilization (EU), ratio (EUR), loss (EXL), efficiency (EXeff), improvement potential (IP), exergetic sustainability index (ESI) investigated. results showed that increasing increased DR, Deff, EU, EUR, EXL, EXeff, IP, ESI, while thickness Deff Ea, but decreased DR. highest Ea values 4.2 × 10−8 m2/s, 53 KJ/mol, respectively. EU EUR varied from 10 to 150 J/s 0.39 0.79, EXL EXeff between 2 12.5 58 75 %, Midilli’s model had best performance in predicting yam with coefficient determination (R2 = 0.9998), root mean square error (RMSE 0.0049), sum (SSE 0.0023).
